The cuisine also features a variety of soups, such as the cold soup tarator, and pastries, such as the filo doughbased banitsa, pita and the various types of Börek.TheBulgarian yogurt is famous for its unique taste because the bacteria used to make it, Lactobacillus bulgaricus, is only found naturally in Bulgarian air.
